Delightful Pumpkin Brownies

Rich, fudgy pumpkin brownies packed with fall flavors like cinnamon and nutmeg.

  • 1/2 cup unsalted butter (cut into about 8 pieces)
  • 4 ounces dark chocolate (finely chopped)
  • 1 cup granulated sugar
  • 2 large eggs (whisked)
  • 1/2 cup all-purpose flour
  • 2 tablespoons cocoa powder
  • 1/4 teaspoon salt
  • 1 cup pumpkin puree (NOT the entire can)
  • 1 cup evaporated milk (NOT the entire can)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon ginger powder
  • 1/8 teaspoon ground cloves
  • 1 tablespoon cornstarch (AKA cornflour)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking pan: Grease a 9×9-inch baking dish or line with parchment paper.
  3. Melt the butter and chocolate: In a medium saucepan over low heat, combine butter and dark chocolate pieces.
  4. Mix in the sugars: Add granulated sugar and brown sugar, stirring until combined.
  5. Incorporate the eggs: Whisk in the eggs until smooth.
  6. Add the pumpkin and evaporated milk until well-blended.
  7. Mix dry ingredients: In a separate bowl, whisk together flour, cocoa powder, salt, cornstarch, cinnamon, nutmeg, ginger, and cloves.
  8. Combine wet and dry ingredients gradually until just combined.
  9. Pour the brownie batter into the prepared baking dish.
  10. Bake for 25-30 minutes until a toothpick comes out mostly clean.
  11. Cool and serve after allowing to cool for at least 10 minutes.

Notes

For added richness, serve with whipped cream or vanilla ice cream. Drizzle with caramel sauce for an elevated dessert.
