Cinnamon Roll Cheesecake Cookies

Delicious cookies combining the gooeyness of cinnamon rolls with the creaminess of cheesecake.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butters and sugars together until light and fluffy, about 3-4 minutes.
  3. Add the eggs and vanilla one at a time, mixing well after each addition.
  4. Combine the dry ingredients in a separate bowl, then gradually add them to the wet mixture until just combined.
  5. Make the cheesecake filling by beating the cream cheese and powdered sugar until smooth, then adding the milk.
  6. Assemble the cookies by placing a heaping spoonful of dough on the baking sheet, adding cheesecake filling, and covering with more dough.
  7. Bake for 12-15 minutes, until golden around the edges.
  8. Cool on a wire rack for 5 minutes before serving.

Notes

Best enjoyed warm. Pair with coffee or milk for an extra treat.
