Chocolate Carrot Cake

A decadent chocolate cake that cleverly incorporates grated carrots for added sweetness and moisture, making it a delightful and somewhat healthier dessert.

  • 1 cup grated carrots
  • 1/2 cup cocoa powder
  • 1 cup maple syrup
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 cup dairy-free chocolate chips
  • 1 cup chocolate pudding (dairy-free)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan.
  2. Mix the dry ingredients in a large bowl: almond flour, cocoa powder, baking soda, and salt.
  3. Incorporate the wet ingredients in another bowl: maple syrup, unsweetened applesauce, and vanilla extract.
  4. Toss in the grated carrots and fold them into the wet mixture.
  5. Add the dry ingredients to the wet mixture carefully using a spatula to fold them together.
  6. Fold in the dairy-free chocolate chips and chocolate pudding until well combined.
  7. Bake for 25–30 minutes or until a toothpick comes out mostly clean.
  8. Cool the cake in the pan for 10 minutes before transferring it to a cooling rack.
  9. Serve it dusted with cocoa powder or alongside dairy-free ice cream.

Notes

For a richer flavor, consider adding a pinch of cinnamon or nutmeg. This cake can also be made ahead of time; just store it tightly wrapped.
