Apple Pumpkin Muffins

Delightful muffins that marry the sweetness of apples with rich pumpkin flavors, perfect for fall.

  • 1 cup pumpkin puree
  • 1 cup fresh apple chunks
  • 1 ½ cups all-purpose flour
  • ½ cup sugar
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon salt
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For the Cinnamon Streusel Topping:
  • ¼ cup butter
  • ¼ cup brown sugar
  • ¼ cup all-purpose flour
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin tin with liners or grease it.
  3. Mix the dry ingredients in a large bowl: flour, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Blend the wet ingredients in a separate bowl: pumpkin puree, apple chunks, vegetable oil, eggs, and vanilla extract.
  5. Combine the wet and dry ingredients gently.
  6. Make the cinnamon streusel by melting butter and mixing with brown sugar, flour, and cinnamon.
  7. Fill the muffin tin with batter about 2/3 full.
  8. Bake for 20–25 minutes until a toothpick comes out clean.
  9. Cool in the pan for 5 minutes before transferring to a wire rack.

Notes

These muffins are best served warm with butter or honey. Consider adding nuts or dried fruits for variety.
