No-Bake Strawberry Cheesecake Cups

Delightful no-bake strawberry cheesecake cups that are creamy, fruity, and perfect for any occasion.

  • 3 tbsp Granulated sugar
  • 5 tbsp Unsalted butter, melted
  • 16 oz Cream cheese, softened (2 packages)
  • ¾ cup Powdered sugar
  • 1 tsp Vanilla extract
  • 1 cup Heavy whipping cream (cold)
  • 2 cups Strawberries, diced (fresh and ripe)
  • 2 tbsp Granulated sugar (optional)
  • 1 tsp Lemon juice
  • Whipped cream (for garnish)
  • Strawberries, sliced (for garnish)
  • Graham cracker crumbs (optional crunch)

Instructions

  1. Prepare the Graham Cracker Crust: Crush the graham crackers, mix with sugar and melted butter, and fill the cups with the mixture.
  2. Make the Cheesecake Filling: Beat the cream cheese, powdered sugar, and vanilla extract, then whip the heavy cream and fold together.
  3. Prepare the Strawberries: Dice the strawberries, add sugar and lemon juice, and layer with cheesecake filling.
  4. Chill and Garnish: Refrigerate for 2-4 hours, then garnish with whipped cream, sliced strawberries, and graham cracker crumbs.

Notes

Can be prepared up to two days in advance. Ensure cream cheese is softened for a smooth mixture.
