No-Bake Orange Creamsicle Cheesecake

  • 1 cup Boiling Water
  • 2 cups Graham Cracker Crumbs (about 14 sheets)
  • 6 tablespoons Unsalted Butter, melted
  • A Pinch of Salt
  • 2 (8-ounce) blocks Cream Cheese, softened
  • 1 ½ cups Powdered Sugar, divided
  • 2 cups Heavy Whipping Cream
  • ½ teaspoon Vanilla Extract
  • Zest of 1 Orange (optional)

Instructions

  1. Prepare the Crust: In a mixing bowl, combine your graham cracker crumbs with the melted butter and a pinch of salt.
  2. Form the Crust: Spray a 9-inch springform pan with non-stick spray, then press the graham mixture into the bottom of the pan.
  3. Dissolve the Jello: In a medium bowl, combine the orange jello powder with 1 cup of boiling water, stirring until completely dissolved.
  4. Create the Filling: In a large mixing bowl, beat the softened cream cheese with 1 cup of powdered sugar until smooth and creamy.
  5. Add the Jello: Slowly pour the cooled jello mixture into the cream cheese mix, blending until fully incorporated.
  6. Whip the Cream: In another bowl, whip the heavy cream and remaining ½ cup of powdered sugar until soft peaks form.
  7. Combine Filling and Cream: Gently fold the whipped cream into the jello-cream cheese mixture in batches.
  8. Fill the Crust: Pour the cheesecake mixture over the prepared crust and smooth the top with a spatula.
  9. Chill: Cover the cheesecake with plastic wrap and refrigerate for at least 240 minutes, or overnight.
