Mini Apple Cheesecakes

Delightful mini cheesecakes filled with tender apple bits on a buttery vanilla wafer crust, perfect for autumn gatherings.

  • 12 vanilla wafers
  • 8 oz cream cheese, softened
  • 1 apple, finely diced
  • 1 egg
  • 1/3 cup sugar
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking tray by lining a muffin tin with cupcake liners or greasing it lightly.
  3. Make the crust by crushing 12 vanilla wafers and mixing with 2 tablespoons melted butter; press into the bottom of each muffin cup.
  4. Mix the cheesecake filling by beating the cream cheese until smooth; add sugar and mix well.
  5. Add the egg and cinnamon, mixing just until combined.
  6. Fold the diced apple into the cheesecake mixture.
  7. Fill each muffin cup about 3/4 full with the cheesecake mixture.
  8. Bake for 20-25 minutes, until set but slightly jiggly in the center.
  9. Cool for 10-15 minutes in the pan, then remove and cool completely on a wire rack.
  10. Chill in the fridge for at least an hour before serving.

Notes

For a twist, try adding caramel sauce or different fruits to the recipe.
