Nectarine Bread

A delightful bread capturing the essence of summer with tender nectarines and warm spices.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh nectarines, diced
  • 1 teaspoon ground cinnamon
  • 1/4 cup powdered sugar (for glaze)
  • 1 tablespoon milk (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan by greasing it.
  3. Mix the flour, baking soda, cinnamon, and salt in a large bowl.
  4. Cream the butter, brown sugar, and granulated sugar together until light and fluffy.
  5. Add the eggs, one at a time, mixing well after each addition, then stir in the vanilla extract.
  6. Combine the dry mixture with the wet mixture until just combined.
  7. Incorporate the diced nectarines by folding gently.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 50-60 minutes or until a toothpick comes out clean.
  10. Cool the bread for 10 minutes in the pan, then turn it out onto a wire rack.
  11. Glaze with a mixture of powdered sugar and milk if desired.

Notes

Slice thick and serve warm with butter or cream cheese. This recipe can be modified with nuts, berries, or spices as desired.
