Easy Vegetable Soup

A comforting bowl of warmth and goodness, perfect for cozy nights and chilly days.

Ingredients

  • 2 cups vegetable broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup green beans, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent.
  3. Throw in the diced carrots, celery, and potatoes. Stir for about 5 minutes.
  4. Pour in the vegetable broth and add the can of diced tomatoes.
  5. Sprinkle in the dried thyme, salt, and pepper. Stir well.
  6. Let the soup come to a gentle boil, then reduce the heat and simmer for about 20 minutes.
  7. Taste your soup and adjust the seasoning as needed.
  8. Ladle the soup into bowls and enjoy!

Notes

Feel free to get creative with the vegetables and spices. Add leftover veggies, herbs, or proteins as desired.
