Ingredients

  • 1 bunch Green Kale, chopped
  • 2 Fresh Peaches, sliced
  • 1 cup Blueberries
  • 2 tablespoons Honey
  • 2 tablespoons Lemon Juice
  • 3 tablespoons Olive Oil
  • 1/4 cup Pepitas
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prep the Kale: Rinse the kale under cool water and remove tough stems, then chop into bite-sized pieces.
  2. Massage the Kale: Drizzle olive oil and sprinkle salt over the kale, massaging for 2-3 minutes until tender.
  3. Prepare the Dressing: Whisk honey, lemon juice, and remaining olive oil in a small bowl.
  4. Chop the Fruits: Slice peaches and rinse blueberries.
  5. Combine All Ingredients: Toss the massaged kale with the dressing until evenly coated.
  6. Add the Fruits and Pepitas: Fold in peach slices and blueberries, and top with pepitas.
  7. Chill & Serve: Let the salad chill for 15-20 minutes before serving.
