Spicy Peach & Chickpea Salad

A vibrant summer salad featuring ripe peaches and hearty chickpeas, dressed with zesty lime and spices.

  • 2 ripe peaches (300g), diced
  • 1 (15-ounce/425g) can chickpeas, drained and rinsed
  • 1/2 red onion (75g), thinly sliced
  • 1 red bell pepper (150g), diced
  • 1/4 cup fresh cilantro (15g), chopped
  • 1 jalapeño (10g), minced (optional)
  • 3 tablespoons olive oil (45ml)
  • 2 tablespoons lime juice (30ml)
  • 1 tablespoon honey (15ml)
  • 1 teaspoon chili powder (5ml)
  • 1/2 teaspoon cumin (2.5ml)
  • 1/4 teaspoon salt (1.25ml)
  • 1/4 teaspoon black pepper (1.25ml)

Instructions

  1. Prepare the ingredients: Start by washing your fruits and veggies. Rinse the chickpeas under cold water until the liquid runs clear.
  2. Dice the peaches: Slice the peaches in half, remove the pit, and dice the flesh into bite-sized pieces.
  3. Slice the red onion: Thinly slice the red onion.
  4. Chop the red bell pepper: Dice your red bell pepper into small cubes.
  5. Mix the dressing: In a small bowl, whisk together the olive oil, lime juice, honey, chili powder, cumin, salt, and black pepper.
  6. Combine the salad: In a large bowl, combine the chickpeas, diced peaches, sliced onion, and diced bell pepper. Pour the dressing over the top and gently toss.
  7. Add fresh herbs and jalapeño: Fold in the chopped cilantro and minced jalapeño, mixing carefully.
  8. Let it marinate: Allow the salad to sit for 15-30 minutes to let the flavors meld together.

Notes

You can garnish with extra cilantro or lime wedges before serving. This salad pairs well with grilled chicken or fish.
