Bang Bang Chicken Skewers

Juicy chicken pieces marinated in a creamy, spicy sauce, grilled to perfection on skewers, perfect for picnics or barbecues.

  • 2 lbs boneless, skinless chicken breasts, cut into 1.5 inch pieces
  • ¼ cup olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 12 tablespoons sriracha
  • Wooden skewers, soaked in water

Instructions

  1. Cut the chicken breasts into bite-sized pieces, about 1.5 inches.
  2. Whisk together olive oil, salt, and black pepper in a bowl.
  3. Add mayonnaise, sweet chili sauce, and sriracha to create the Bang Bang Sauce.
  4. Toss the chicken pieces in the marinade, ensuring they are well-coated.
  5. Cover and let marinate in the fridge for at least 30 minutes.
  6. Soak wooden skewers in water for 30 minutes to prevent burning.
  7. Preheat the grill to medium-high heat.
  8. Thread the marinated chicken onto the skewers.
  9. Grill the skewers for 4-5 minutes per side until the internal temperature reaches 165°F.
  10. Remove from the grill and let rest for a few minutes before serving.

Notes

Feel free to add vegetables to the skewers or use shrimp instead of chicken for a variation.
