Southwest Chicken Bowl

  • 2 lbs boneless skinless chicken breast
  • 2 tablespoons olive oil
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 can black beans (drained and rinsed)
  • 1.5 cups corn kernels (fresh or frozen)
  • 1.5 cups cooked rice
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1 avocado (sliced)
  • 0.5 cup sour cream
  • 0.25 cup fresh cilantro (chopped)
  • 2 limes
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken Marinade: In a large bowl, whisk together the olive oil, cumin, chili powder, paprika, salt, and pepper. Add the chicken. You want to coat it well. Let it marinate for at least 30 minutes.
  2. Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Once hot, add the marinated chicken. Cook for about 6-7 minutes per side, or until completely cooked through (internal temperature should reach 165°F). Let it rest for a few minutes after cooking.
  3. Prepare the Black Beans and Corn: In a small saucepan, combine the rinsed black beans and corn. Heat over medium until warmed through.
  4. Cook the Rice: Prepare rice according to package instructions while your chicken is cooking.
  5. Assemble Your Feast: Once your chicken is cooked and rested, slice it into strips. In large bowls or plates, start with a base of rice, layer on black beans and corn, and then add your glorious chicken slices.
  6. Top It Off: Finish with diced tomatoes, shredded cheese, sliced avocado, a dollop of sour cream, and sprinkle with cilantro. Squeeze fresh lime juice over the top.

Notes

Customize the bowl with your favorite toppings. Consider using tortilla chips instead of rice for a nacho-style twist.
