Deliciously Cozy Pumpkin French Toast

  • 4 slices of thick-cut bread (challah, brioche, whole-grain, or sourdough)
  • 2 large eggs
  • 1/2 cup milk (or almond, oat, soy milk)
  • 1/2 cup canned pumpkin puree
  • 1 teaspoon pumpkin spice
  • 1 teaspoon vanilla extract
  • Butter for cooking
  • Maple syrup for serving

Instructions

  1. Preheat your griddle or pan over medium heat.
  2. Whisk together the eggs, milk, pumpkin puree, pumpkin spice, and vanilla extract in a mixing bowl.
  3. Dip the bread slices into the pumpkin mixture, soaking them briefly.
  4. Butter your pan with a generous pat of butter.
  5. Cook the soaked bread for 3-4 minutes on each side until golden brown.
  6. Repeat the process with the remaining slices.
  7. Serve warm with butter, maple syrup, and optional whipped cream.
