  • 1 cup Oat Flour or Almond Flour
  • 1/2 cup Greek Yogurt
  • 1 Egg (or flaxseed egg)
  • 2 teaspoons Seasonal Spices (cinnamon, nutmeg, or ginger)
  • 1/2 cup Flavor-Specific Mix-ins (chocolate chips, nuts, dried fruit)
  • 1/3 cup Natural Sweetener (maple syrup, honey, agave)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients: In a large bowl, combine oat or almond flour, protein powder, and seasonal spices.
  3. Whisk the wet ingredients: In a separate bowl, mix Greek yogurt, egg, and maple syrup until smooth.
  4. Combine both mixtures: Pour wet into dry and stir gently until just combined.
  5. Add your fun mix-ins: Fold in chocolate chips or nuts gently.
  6. Shape your cookies: Drop dollops of dough onto a parchment-lined baking sheet.
  7. Bake to perfection: Cook for 12-15 minutes until edges are lightly golden.
  8. Cool and enjoy: Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container for up to a week at room temperature or two weeks in the fridge. These cookies can be frozen as well.
