Protein-Packed Almond Poppy Seed Muffins

Delicious muffins packed with protein and the magical crunch of poppy seeds, perfect for breakfast or a post-workout snack.

  • 1 cup Greek yogurt or cottage cheese
  • 2 scoops protein powder
  • ½ cup reduced-fat dairy (milk or buttermilk)
  • 1 teaspoon almond extract
  • 1 ½ cups light flour alternative (almond flour or whole grain mix)
  • 2 tablespoons poppy seeds
  • Pinch of salt
  • ¼ cup honey or maple syrup (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the wet ingredients in a bowl: combine Greek yogurt, protein powder, reduced-fat dairy, and almond extract until lump-free.
  3. Add your dry ingredients to a separate bowl: mix flour, poppy seeds, and salt, then fold into the wet mixture.
  4. Sweeten it up by adding honey or maple syrup to your batter.
  5. Prepare a muffin tin with liners or grease lightly with cooking spray.
  6. Scoop the batter into muffin cups filling them about ¾ full.
  7. Bake for 18-22 minutes until a toothpick comes out clean.
  8. Cool in the tin for 5 minutes, then transfer to a wire rack.
