4 tablespoons cold unsalted butter
1/2 cup granulated sugar (divided)
1/2 cup + 2 tablespoons all-purpose flour
1 teaspoon baking powder
1/2 cup half-and-half
2 pounds fresh peaches (about 4–6 ripe peaches)
2 teaspoons fresh lemon juice
1/2 teaspoon ground cinnamon
Instructions
Preheat the oven to 350°F (175°C).
Prepare the peaches by slicing them in half, removing the pits, and peeling away the skin. Cut into wedges and toss with 1/4 cup granulated sugar and lemon juice, letting sit for 10-15 minutes.
Make the batter by whisking together flour, remaining sugar, baking powder, and ground cinnamon. Gradually mix in half-and-half until smooth.
Butter an 8-inch baking dish and melt the cold unsalted butter in it. Pour half into the batter.
Combine the batter and pour into the baking dish, spooning the peach mixture on top.
Bake for 35-45 minutes until golden brown and bubbling.
Cool for 10 minutes before serving.
