  • 1 cup Pineapple Chunks

  • 1/4 cup Ketchup
  • 1/4 cup Vinegar
  • 1/4 cup Sugar
  • 2 tbsp Soy Sauce
  • 1 tbsp Cornstarch
  • 2 tbsp Vegetable Oil
  • Salt and Pepper to taste

Instructions

  1. Prep Your Ingredients: Start by gathering all your ingredients. Chop your chicken, bell peppers, onion, and pineapple.
  2. Marinate the Chicken: In a bowl, combine the diced chicken with soy sauce, a pinch of salt, and a sprinkle of pepper. Let that marinate for about 15 minutes.
  3. Heat The Oil: While the chicken marinates, heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and sauté for about 5-6 minutes.
  4. Add the Vegetables: Once the chicken is browned, toss in the chopped onion and bell peppers, sautéing for an additional 3-4 minutes.
  5. Make the Sauce: In a bowl, mix ketchup, vinegar, sugar, and cornstarch until smooth. Pour over the chicken and veggies.
  6. Thicken the Sauce: Allow the mixture to simmer for about 2-3 minutes until the sauce thickens.
  7. Add Pineapple: Gently fold in the pineapple chunks and let it simmer for another minute.
  8. Serve Hot: Serve your sweet and sour chicken over a bed of rice, garnished with sesame seeds or chopped green onions.
