Homemade Nectarine Cobbler

A delightful summer dessert that captures the essence of warm sunny days with juicy nectarines and buttery, golden crust.

  • 4 cups fresh nectarines, sliced
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 teaspoon cinnamon
  • Vanilla ice cream (for serving)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine sliced nectarines with 1/2 cup of sugar, lemon juice, and vanilla extract in a bowl.
  3. Let the nectarines sit for 10-15 minutes.
  4. Whisk together flour, baking powder, salt, and remaining sugar in another bowl.
  5. Pour in melted butter and milk and stir until just combined.
  6. Pour batter into baking dish and spoon nectarine mixture over the top.
  7. Dust the top with cinnamon.
  8. Bake for 40-45 minutes until golden brown.
  9. Cool for 10-15 minutes before serving.

Notes

Serve with vanilla ice cream for an extra special treat. You can also use peaches instead of nectarines.
