Easy Homemade Nectarine Pie

A delightful homemade Nectarine Pie featuring a flaky crust and sweet, juicy nectarines, perfect for summer gatherings.

  • 12 ounces (2 1/2 cups) all-purpose flour, unbleached
  • 2 ounces (1/4 cup) granulated sugar
  • 1 1/2 teaspoons kosher salt
  • 8 ounces cold unsalted butter, cut into small pieces
  • 1/3 cup cold water
  • 3 1/2 pounds ripe nectarines (approximately 6-7)
  • 1 1/2 tablespoons fresh squeezed lemon juice
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1/4 teaspoon ground cinnamon
  • A few gratings of fresh nutmeg
  • 1/8 teaspoon kosher salt
  • 3 tablespoons cornstarch
  • 1 tablespoon milk or cream
  • 1 tablespoon turbinado sugar

Instructions

  1. In a large mixing bowl, combine the flour, granulated sugar, and kosher salt. Use a whisk to mix until well combined.
  2. Gather your cold, unsalted butter pieces and add them to the bowl. Cut the butter into the flour mixture until it resembles coarse crumbs.
  3. Pour in the cold water a little at a time, mixing gently with a fork until the dough begins to come together. Form into a ball and refrigerate for at least an hour.
  4. Preheat your oven to 425°F (220°C). Prepare your filling by slicing the nectarines and placing them in a bowl with lemon juice, granulated sugar, brown sugar, cinnamon, nutmeg, kosher salt, and cornstarch.
  5. Dust your work surface with flour and roll out half of the dough into a circle, transferring it to a 9-inch pie dish.
  6. Add the nectarine filling to the pie crust and top with the second rolled-out dough piece, sealing the edges.
  7. Brush the top with milk or cream and sprinkle turbinado sugar over it.
  8. Bake for 45-50 minutes or until the crust is golden and the filling is bubbling. Cool for at least an hour before slicing.
  9. Serve warm, with vanilla ice cream or whipped cream if desired.

Notes

For a crispy crust, ensure butter is cold and don’t overwork the dough. You can substitute nectarines with peaches or plums.
