Nectarine Muffins

Delightful Nectarine Muffins bursting with juicy flavor, perfect for breakfast or an afternoon treat.

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup unsalted butter (melted)
  • 2 large eggs
  • ¾ cup milk
  • 1 teaspoon vanilla extract
  • 2 ripe nectarines (diced)
  • Optional: cinnamon or nutmeg

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your muffin tin by lining with paper liners or greasing it.
  3. Mix the dry ingredients in a large bowl: flour, baking powder, salt, granulated sugar, and brown sugar.
  4. Melt the butter and let it cool slightly.
  5. Combine the wet ingredients (melted butter, eggs, milk, vanilla) in another bowl.
  6. Combine the wet and dry ingredients until just mixed.
  7. Fold in the diced nectarines.
  8. Fill the muffin tin about ¾ full.
  9. Add optional toppings if desired.
  10. Bake for 20 to 25 minutes until golden brown.
  11. Cool for 5 minutes before transferring to a wire rack.

Notes

These muffins can be customized with nuts, different fruits, or spices. Freeze them for longer storage.
