Make the Puff Pastry: If making homemade puff pastry, start the day before to allow for chilling. Combine flour, salt, and cold butter in a bowl, breaking it into small pieces until the mixture resembles coarse crumbs. Gradually add ice water, mixing until it forms a dough. Fold and roll it out multiple times (about 6-8 folds). After shaping it into a rectangle, cover in plastic wrap and chill in the refrigerator overnight.
Preheat the Oven: When you’re ready to assemble your tarts, preheat your oven to 400°F (200°C).
Roll Out the Dough: On a floured surface, gently roll out your puff pastry until it’s about 1/4 inch thick. Cut the dough into small squares (about 4×4 inches).
Prepare the Cream Cheese Filling: In a mixing bowl, blend your cream cheese with honey, a sprinkle of cinnamon, and a squeeze of lemon juice until it’s smooth and creamy.
