Simple Huckleberry Cobbler

A deliciously simple dessert that celebrates the sweet-tart flavor of huckleberries, perfect for family gatherings or a cozy evening treat.

  • 4 cups huckleberries (fresh or frozen)
  • 1 lemon (optional)
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk (whole or 2%)
  • 1/2 cup butter (melted)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13-inch baking dish and grease it with butter or non-stick spray.
  3. Mix the huckleberries with the optional lemon zest and juice, and set aside.
  4. Make the batter by whisking together the flour, sugar, baking powder, and salt.
  5. Add the milk and melted butter to the dry ingredients, and mix gently until just combined.
  6. Combine the huckleberries into your batter, folding carefully.
  7. Bake for 35-45 minutes until bubbly and golden brown.
