Homemade Glazed Donuts

Delight in soft, pillowy homemade glazed donuts with a warm, sugary glaze that melts in your mouth.

Ingredients

  • 3/4 cup warm water (about 110°F)
  • 1/4 cup bread flour
  • 3 cups + 2 tablespoons bread flour
  • 1/3 cup granulated sugar
  • 1 tablespoon instant yeast
  • 1 1/4 teaspoons fine sea salt
  • 1/2 cup whole milk (room temperature)
  • 1 large egg (room temperature)
  • 3 tablespoons bread flour for Tangzhong
  • 1 tablespoon water for Tangzhong
  • 5 tablespoons unsalted butter (room temperature)
  • Neutral oil for frying (like canola, vegetable, or avocado oil)
  • 3 1/2 cups powdered sugar
  • 1/3 cup + 1 tablespoon hot water
  • 1 teaspoon vanilla paste or extract
  • A pinch of fine sea salt

Instructions

  1. Prepare the Tangzhong: Mix 3 tablespoons of bread flour with 1 tablespoon of water in a small saucepan. Cook over medium heat until thickened, about 2-3 minutes. Remove from heat and let cool.
  2. Activate the yeast: Combine 3/4 cup of warm water with instant yeast and 1 tablespoon of sugar. Let sit for 5-10 minutes until frothy.
  3. Mix the dry ingredients: Whisk together 3 cups + 2 tablespoons of bread flour, 1/4 cup of bread flour, remaining sugar, and 1 1/4 teaspoons of fine sea salt.
  4. Combine wet ingredients: Add the activated yeast, whole milk, egg, cooled Tangzhong, and butter to the dry ingredients. Mix until well combined.
  5. Knead the dough: Transfer to a floured surface and knead for 8-10 minutes until soft and elastic.
  6. First rise: Place the dough in a greased bowl, cover, and let rise in a warm area for about 1 hour or until doubled in size.
  7. Shape the donuts: Roll the dough out to 1/2-inch thickness and cut into donuts. Place on a parchment-lined baking sheet for a second rise of 30 minutes.
  8. Heat the oil: Heat neutral oil in a pot to about 350°F.
  9. Fry the donuts: Fry donuts for about 1-2 minutes on each side until golden brown. Drain on a wire rack.
  10. Prepare the glaze: Whisk together powdered sugar, hot water, vanilla, and a pinch of salt until smooth.
  11. Glaze the donuts: Dip the tops into the glaze and let excess drip off.
