A delightful Hawaiian Chicken Sheet Pan dish that combines juicy chicken, colorful veggies, and sweet pineapple for a vibrant and easy meal.

  • 1 ½ lbs (700 g) boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 small red onion, cut into wedges
  • 1 ½ cups fresh pineapple chunks (or canned, drained)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ¼ tsp chili flakes (optional)
  • ⅓ cup low-sodium soy sauce
  • ¼ cup pineapple juice
  • 3 tbsp honey (or brown sugar)
  • 2 tbsp rice vinegar (or apple cider vinegar)
  • 1 tbsp cornstarch + 2 tbsp water (optional for slurry)

Instructions

  1. Preheat the Oven: Fire up your oven to 400°F (200°C).
  2. Prepare the Chicken: In a large bowl, toss your chicken pieces with olive oil, garlic, salt, pepper, paprika, and chili flakes.
  3. Chop the Veggies: While the chicken marinates, chop your bell peppers and onion.
  4. Assemble on a Sheet Pan: On a large rimmed baking sheet, spread out the chicken, red bell pepper, yellow bell pepper, red onion, and fresh pineapple.
  5. Make the Sauce: In a small bowl, whisk together soy sauce, pineapple juice, honey (or brown sugar), and vinegar.
  6. Drizzle and Roast: Pour the sauce evenly over the chicken and veggies, then bake for 25-30 minutes.
  7. Finish and Serve: Let it rest for 5 minutes before serving.

Notes

Serve over steamed rice or quinoa and garnish with fresh cilantro, green onions, or sesame seeds.
