The Ultimate Grinder Sandwich

A hearty sandwich packed with layers of savory meats, fresh veggies, and a zesty spread that creates a delightful experience in every bite.

Ingredients

  • 1/4 cup mayonnaise
  • 1/2 tablespoon red wine vinegar
  • 1 teaspoon oregano (or Italian seasoning)
  • 1 small clove garlic, minced
  • 1 tablespoon Parmigiano Reggiano, grated
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 cups lettuce, thinly sliced
  • 1/4 cup pepperoncini peppers, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 2 grinder/hoagie/sub buns, cut in half
  • 4 ounces provolone cheese, deli sliced
  • 6 ounces ham, deli sliced
  • 4 ounces capocollo, deli sliced
  • 2 ounces Genoa salami, deli sliced
  • 2 ounces pepperoni, deli sliced
  • 1 ounce soppressata salami, deli sliced
  • 1 ounce prosciutto, deli sliced
  • 1 large beefsteak tomato, thinly sliced
  • 4 tablespoons Parmigiano Reggiano, grated

Instructions

  1. Prepare the spread: In a medium bowl, mix together the mayonnaise, red wine vinegar, oregano, minced garlic, Parmigiano Reggiano, red pepper flakes (if using), salt, and pepper.
  2. Slice the hoagie rolls in half and spread a generous amount of the mayonnaise mixture on both sides.
  3. Add the thinly sliced lettuce on one side of the sandwich.
  4. Add the pepperoncini peppers and red onion.
  5. Place the provolone cheese directly on top of the veggies.
  6. Layer the deli meats starting with the ham, then capocollo, Genoa salami, pepperoni, soppressata, and prosciutto.
  7. Top with slices of fresh beefsteak tomato.
  8. Finish with a dusting of grated Parmigiano Reggiano and place the top half of the bun on.
  9. Toast the sandwich in a preheated oven at 350°F (175°C) for 10-15 minutes if desired.
  10. Slice diagonally and serve.

Notes

Experiment with different meats and spreads for unique flavor combinations. Try to layer the spread to prevent sogginess.
