Simple Grilled Chicken Caprese

A classic dish that combines tender grilled chicken, creamy mozzarella, fresh tomatoes, and fragrant basil, all drizzled with a tangy balsamic reduction.

  • 4 chicken breasts (pounded to 1/2-inch thickness)
  • 2 tbsp olive oil
  • 1 1/2 tsp Italian seasoning
  • 3/4 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 slices fresh mozzarella (preferably BelGioioso)
  • 4 slices tomato (cut into 1/4-inch thick rounds)
  • 3 tbsp fresh basil (thinly sliced into ribbons)
  • 1/2 cup balsamic vinegar (preferably Pompeian)
  • 1 1/2 tbsp brown sugar

Instructions

  1. Prep the chicken by pounding it between two pieces of plastic wrap until it’s about 1/2-inch thick. Season with olive oil, Italian seasoning, garlic powder, onion powder, salt, and pepper.
  2. Heat the grill to medium-high heat, brushing with olive oil to prevent sticking.
  3. Grill the chicken for 5–7 minutes on one side, then flip and cook for another 5–7 minutes until cooked through (internal temperature 165°F).
  4. Add a slice of mozzarella and tomato to each chicken breast in the last minutes of grilling, covering to melt the cheese.
  5. Prepare the balsamic reduction by simmering balsamic vinegar and brown sugar in a saucepan for 5–10 minutes until thickened.
  6. Finish by removing chicken from the grill, topping with basil, and drizzling with balsamic reduction.

Notes

For a plant-based option, substitute chicken with firm tofu or turkey cutlets. Serve with rustic bread or a fresh green salad.
