Greek Pasta with Feta

A delightful Greek Pasta with Feta dish bursting with fresh flavors and wholesome ingredients, perfect for busy weeknights or lazy weekends.

Ingredients

Scale
  • 8 oz pasta (penne or your choice)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Cook the Pasta: Begin by boiling a large pot of salted water. Once it reaches a rolling boil, add your pasta. Cook according to package instructions until al dente — this usually takes about 8-10 minutes. Remember to stir occasionally to prevent sticking. Pro tip: Reserve about 1/2 cup of pasta water before draining.
  2. Prep the Ingredients: While the pasta cooks, slice your cherry tomatoes in half and slice the Kalamata olives. Chop your garlic too.
  3. Sauté the Garlic and Tomatoes: In a large skillet, heat the olive oil over medium heat. Add in the minced garlic and sauté for about 30 seconds until fragrant. Add in the halved cherry tomatoes and a pinch of salt and pepper, cooking for about 3-4 minutes until the tomatoes soften.
  4. Combine Everything: Add the cooked pasta directly into the skillet with the tomatoes and garlic. Toss everything together, adding a little reserved pasta water to help create a luscious sauce.
  5. Add Olives and Feta: Gently fold in the sliced Kalamata olives and crumbled feta cheese. Allow the heat from the pasta to warm the feta.
  6. Taste and Adjust: Taste your creation! Add more salt, pepper, or a drizzle of olive oil if needed.
  7. Garnish and Serve: Plate the pasta and finish with a sprinkle of freshly chopped basil or parsley.

Notes

This dish is perfect for serving family-style. Pair with crusty bread and a bright salad. It also works well with added proteins like grilled chicken or shrimp.
