  • lbs shrimp (peeled, deveined & rinsed)
  • ½ tsp salt
  • Paprika & Italian herb blend (to taste)
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 small onion (diced)
  • 5 cloves garlic (minced)
  • ½ cup white wine
  • 5 oz sun-dried tomatoes (drained & sliced)
  • 1⅓ cups half-and-half
  • Salt & pepper to taste
  • ½ cup grated parmesan cheese
  • 1 large handful of baby spinach

Instructions

  1. Prep Your Ingredients: Start by peeling and deveining the shrimp. Ensure everything is ready — chopped, diced, and measured.
  2. Sauté the Aromatics: In a large skillet, heat the butter and olive oil over medium heat. Add the diced onion and sauté for about 2-3 minutes until translucent. Add the minced garlic and cook for another minute.
  3. Add the White Wine: Pour in the white wine and bring it to a gentle simmer, letting it reduce by half (about 3-4 minutes).
  4. Mix in the Tomatoes and Seasonings: Stir in the sun-dried tomatoes, salt, paprika, and Italian herb blend.
  5. Introduce the Shrimp: Add in the shrimp and cook for about 2-3 minutes, until they turn pink and opaque.
  6. Stir in the Cream: Pour in the half-and-half and stir well, bringing it to a slight simmer for another 3-4 minutes.
  7. Finish with Parmesan and Spinach: Remove from heat and stir in the grated parmesan cheese and baby spinach until wilted.
  8. Taste and Adjust: Give everything a final stir and taste to adjust the seasoning as needed.

Notes

Serve over creamy mashed potatoes, pasta, or rice. Garnish with parsley or parmesan and have crusty bread on the side.
