A delightful shrimp dish that’s perfect for impressing loved ones, bursting with rich flavors and warmth.

  • lbs shrimp (peeled, deveined & rinsed)
  • ½ tsp salt
  • Paprika & Italian herb blend
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 small onion (diced)
  • 5 cloves garlic (minced)
  • ½ cup white wine
  • 5 oz sun-dried tomatoes (drained & sliced)
  • 1⅓ cups half-and-half
  • Salt & pepper to taste
  • ½ cup grated parmesan cheese
  • 1 large handful of baby spinach

Instructions

  1. Prep Your Ingredients: Start by peeling and deveining the shrimp if you haven’t already. Ensure everything is ready — chopped, diced, and measured.
  2. Sauté the Aromatics: In a large skillet, heat the butter and olive oil over medium heat. Once melted, toss in the diced onion and sauté for about 2-3 minutes until translucent. Add the minced garlic and let that cook for another minute.
  3. Add the White Wine: Pour in the white wine and bring it to a gentle simmer, letting it reduce by half for about 3-4 minutes.
  4. Mix in the Tomatoes and Seasonings: Stir in sun-dried tomatoes, salt, paprika, and Italian herb blend.
  5. Introduce the Shrimp: Add in the shrimp and cook for about 2-3 minutes, until they turn pink and opaque.
  6. Stir in the Cream: Pour in the half-and-half and bring the mixture to a slight simmer to thicken for another 3-4 minutes.
  7. Finish with Parmesan and Spinach: Remove from heat and stir in grated parmesan cheese until melted, then fold in baby spinach until wilted.
  8. Taste and Adjust: Stir and taste to adjust the seasoning as desired.

Notes

Serve over creamy mashed potatoes, pasta, or rice. Garnish with fresh parsley or extra parmesan. Perfectly paired with crusty bread.
