Marry Me Chickpeas

A rich and creamy chickpea dish that brings warmth and joy, perfect for impressing loved ones or enjoying a cozy night in.

Ingredients

  • 1 tablespoon olive oil
  • 5 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1/2 teaspoon oregano
  • 1/2 teaspoon red chili flakes
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 (15-ounce) cans chickpeas (drained and rinsed)
  • 1 cup vegetable broth
  • 1 tablespoon tomato paste
  • 1 cup vegan cream
  • 2 cups baby spinach (sliced)
  • 45 fresh basil leaves (chopped)
  • Optional: 1/2 cup grated vegan parmesan cheese

Instructions

  1. Heat the olive oil in a medium-sized saucepan over medium heat.
  2. Sauté the minced garlic for about 1-2 minutes until fragrant.
  3. Introduce the chopped sun-dried tomatoes, oregano, red chili flakes, salt, and black pepper; stir and cook for another 2-3 minutes.
  4. Add the drained and rinsed chickpeas and gently mix to coat them.
  5. Pour in the vegetable broth and tomato paste; stir and let simmer for about 10 minutes.
  6. Stir in the vegan cream and allow it to simmer for another 5 minutes on low heat.
  7. Add the sliced spinach and chopped basil; cook for 1-2 minutes until the spinach wilts.
  8. Taste and adjust seasonings as desired before serving.

Notes

Good for leftovers; can be reheated and enjoyed again. Perfect with rice or crusty bread.
