Brown Butter Peach Crisp

A comforting summer dessert that combines sweet peaches with a crunchy, buttery topping.

  • 6 medium peaches, sliced (940 grams or 33 ounces)
  • 1/3 cup granulated sugar (79 grams)
  • 1 tsp vanilla
  • 1/4 tsp cinnamon
  • 4 tsp corn starch (or tapioca starch)
  • 1/2 cup + 1 tbsp all-purpose flour, spooned & leveled (72 grams)
  • 1/2 cup brown sugar, packed (110 grams)
  • 1/4 tsp salt
  • 1/2 tsp cinnamon for topping
  • 1 cup old-fashioned whole rolled oats (95 grams)
  • 1/2 cup + 2 tbsp cold salted butter, cubed (141 grams before browning, 113 grams after)
  • Vanilla ice cream (for serving)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the butter in a medium saucepan over medium heat until golden brown and nutty, about 5 to 7 minutes.
  3. Prepare the peach filling by tossing sliced peaches with sugar, vanilla, cinnamon, and corn starch in a large bowl.
  4. Make the crisp topping by combining flour, brown sugar, salt, cinnamon, and oats in another bowl, then adding the browned butter until crumbly.
  5. Assemble the crisp by spreading the peach filling in a greased baking dish and topping with the oat mixture.
  6. Bake for about 35 to 40 minutes until the top is golden and bubbling.
  7. Cool for 10-15 minutes before serving with vanilla ice cream.

Notes
