Homemade Pumpkin Ravioli with Garlic Brown Butter

Delight in these homemade pumpkin ravioli filled with a creamy ricotta and pumpkin mixture, served in a rich garlic brown butter sauce.

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 cup pumpkin puree
  • 1/2 cup ricotta cheese
  • 1 teaspoon nutmeg
  • Salt and pepper to taste
  • 1/2 cup unsalted butter
  • 3 cloves garlic, minced
  • Fresh sage leaves (optional) for garnish

Instructions

  1. Make the Dough: Start by creating your pasta dough. On a clean surface or in a large bowl, make a mound with the flour. Create a well in the center and add the eggs into it. Using a fork, gently beat the eggs and start incorporating the flour from the inner rim of the well. Gradually work in the flour until you’re able to knead the dough.
  2. Knead the Dough: Knead the dough for about 8-10 minutes, or until it’s smooth and elastic. Let it chill for about 30 minutes wrapped in plastic wrap before you continue.
  3. Prepare the Filling: In a large mixing bowl, combine the pumpkin puree, ricotta cheese, nutmeg, salt, and pepper. Mix until smooth.
  4. Roll and Cut the Pasta: Once your dough has rested, divide it into quarters. Roll out your dough until it’s about 1/8-inch thick. Cut the dough into long strips or squares (about 3 inches wide).
  5. Fill the Ravioli: On one sheet of rolled dough, place about one teaspoon of filling every two inches. Moisten the edges with a little water. Place another sheet of pasta over the top and carefully seal around each filling.
  6. Cooking the Ravioli: Bring a large pot of salted water to a gentle boil. Add the ravioli in batches and cook for about 3-4 minutes or until they float to the top.
  7. Make the Sauce: While the ravioli cooks, melt the unsalted butter in a skillet over medium heat. Add minced garlic and sauté until fragrant, around 1-2 minutes.
  8. Combine and Serve: Add cooked ravioli to the skillet with the brown butter and toss gently to coat. Serve hot!
