Easy Asian Cucumber Salad

A vibrant and refreshing cucumber salad with a punchy dressing that enhances any meal.

  • 5 Persian cucumbers
  • 1/2 tsp salt
  • 1/2 tbsp sesame oil
  • 3/4 tbsp light soy sauce
  • 1/21 tbsp sugar
  • 3/4 tbsp rice vinegar
  • 1 tbsp chili oil
  • 1/2 tbsp garlic (minced, optional)
  • 1/2 tbsp sesame seeds

Instructions

  1. Prep the cucumbers by washing them thoroughly, slicing them in half lengthwise, and then into thin half-moons.
  2. Salt the cucumber slices in a bowl with 1/2 teaspoon of salt and let sit for about 10-15 minutes.
  3. Make the dressing by whisking together sesame oil, light soy sauce, sugar, rice vinegar, and chili oil in a separate bowl.
  4. Combine the drained cucumbers with the dressing, tossing gently to ensure each slice is coated.
  5. Add finishing touches by sprinkling the salad with sesame seeds before serving.
