  • 2 apples, diced
  • 2 large eggs
  • 1/2 cup sugar
  • 1/2 cup butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a muffin tin by greasing it or lining it with paper liners.
  3. Mash the diced apples with a tablespoon of sugar and a sprinkle of cinnamon, and let them sit for 10 minutes.
  4. Mix together the flour, sugar, baking powder, and salt in a bowl. Add eggs and melted butter, stirring until just combined.
  5. Incorporate the apple mixture gently into the batter.
  6. Prepare the streusel by combining 1/2 cup flour, 1/2 cup brown sugar, 1 teaspoon cinnamon, and 1/4 cup melted butter until crumbly.
  7. Fill the muffin tins about two-thirds full with batter.
  8. Top the batter with the streusel mixture.
  9. Bake for 20-25 minutes or until a toothpick comes out clean.
  10. Cool the muffins in the tin for 5 minutes before transferring to a wire rack.
