Apple Pie Cookies

Delicious apple pie cookies that combine the flavors of traditional apple pie with the convenience of a cookie, perfect for any occasion.

  • 1 refrigerated pie crust
  • 2 apples, diced (Granny Smith or Honeycrisp recommended)
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1 tbsp butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Roll out the refrigerated pie crust on a floured surface until it’s about 1/8 inch thick.
  3. Combine the diced apples, brown sugar, and cinnamon in a medium bowl.
  4. Melt the butter and drizzle it over the apple mixture.
  5. Cut out circles from the rolled pie crust using a cookie cutter or glass.
  6. Place a tablespoon of the apple filling onto one half of each circle.
  7. Fold the dough over the filling to form a half-moon shape and use a fork to press the edges.
  8. Transfer the cookies onto a parchment-lined baking sheet.
  9. Bake in the preheated oven for 15-20 minutes until golden brown.
  10. Let them cool for a few minutes before enjoying.

Notes

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. They can be frozen and reheated for later enjoyment.
