Mini Rolo Cheesecake Bites

Deliciously indulgent Mini Rolo Cheesecake Bites combining classic cheesecake with chocolatey caramel Rolos.

  • 24 grams Oreo Crumbs
  • 4 tablespoons Butter (melted)
  • 225 grams Cream Cheese
  • 100 grams Light Brown Sugar
  • 2 tablespoons Flour
  • 100 grams Sour Cream
  • 1 teaspoon Vanilla Extract
  • 2 large Eggs
  • 100 grams Rolos (chopped)
  • 240 ml Heavy Whipping Cream
  • 2 tablespoons Powdered Sugar
  • 1 tablespoon Unsweetened Cocoa Powder
  • 50 ml Caramel Sauce
  • 50 ml Chocolate Sauce

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Combine the Oreo crumbs and melted butter until wet sand forms, then press into the mini cheesecake pan.
  3. Beat the cream cheese in a bowl until smooth, then add the light brown sugar and beat until fluffy.
  4. Add the flour and mix until incorporated.
  5. Pour in the sour cream and vanilla extract, mixing until combined.
  6. Add the eggs one at a time, ensuring the mixture is lump-free.
  7. Fold in the chopped Rolos gently.
  8. Spoon the filling into the crusts and bake for 15-20 minutes until edges are set.
  9. Cool for 10 minutes in the pan, then transfer to a wire rack to chill in the fridge for at least 2 hours.
  10. Whip the cream until soft peaks form, adding powdered sugar for sweetness.
  11. Plate each cheesecake bite with whipped cream, drizzled caramel and chocolate sauces.
