  • Zitronensaft (Lemon Juice)
  • Butter
  • Gemüsebrühe (Vegetable Broth)

  • Zucker (Sugar)
  • Crème fraîche
  • Liebstöckel (Lovage)
  • Petersilie (Parsley)
  • Pimpinelle (Salad Burnet)

Instructions

  1. Prep Your Kohlrabi: Start by washing your kohlrabi thoroughly under cold water. Use a vegetable peeler to remove its tough outer skin. Cut it into small cubes or matchsticks, depending on your preference.
  2. Sauté the Kohlrabi: In a large skillet, melt about 2 tablespoons of butter over medium heat. Once melted, add the kohlrabi pieces. Sauté them for about 5 minutes until they start to soften.
  3. Add Liquid Ingredients: Pour in 1 cup of vegetable broth and the juice of half a lemon. Stir well, and let the mixture come to a gentle simmer.
  4. Season the Dish: Add in a pinch of salt and sugar to balance the flavors. Gently simmer for another 10-15 minutes until the kohlrabi is tender but retains a bit of crunch.
  5. Incorporate the Creamy Element: Once cooked, reduce the heat to low and stir in ½ cup of crème fraîche. Allow it to heat through, stirring gently.
  6. Add Fresh Herbs: Finally, stir in your lovage, parsley, and pimpinelle. Adjust the seasoning as needed.
