Mango Peach Jam

  • 2 cups mangoes, peeled (about 2 fresh mangoes)
  • 3 cups peaches, unpeeled (about 3 fresh peaches)
  • 1 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare your fruit by washing the mangoes and peaches thoroughly. Peel the mangoes and chop them into small pieces. Slice the peaches thinly after removing the pit.
  2. Macerate the fruit by adding the chopped mangoes and peaches to a mixing bowl, sprinkling sugar over them, and letting it sit for about 30 minutes.
  3. Cook the mixture in a heavy-bottomed pot, adding vanilla extract and bringing it to a gentle boil, then reducing heat and simmering to thicken.
  4. Check for the right consistency after about 30-40 minutes of simmering by testing a spoonful on a cold plate.
  5. Jar your jam by pouring it into clean, sterilized jars and sealing them tightly.
