Vegetable Tortilla Roll Ups

Delicious vegetable-filled roll ups, perfect for snacks or gatherings!

  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 (1-ounce) packet Ranch seasoning mix
  • 1 teaspoon dried dill weed
  • 1 cup shredded cheddar cheese
  • ¾ cup shredded carrots
  • ¾ cup finely chopped broccoli
  • ½ cup chopped red bell peppers
  • 4 lavash bread sheets or 5 flour tortillas (10-inch size)

Instructions

  1. Prepare the Creamy Filling: In a medium-sized mixing bowl, beat the softened cream cheese and sour cream until smooth.
  2. Mix in the Seasonings: Add the Ranch seasoning mix and dried dill to the bowl, stirring until well combined.
  3. Fold in the shredded cheddar cheese until well-distributed.
  4. Add your chopped veggies: Pour in the shredded carrots, chopped broccoli, and red bell peppers, then mix until vibrant.
  5. Spread the Filling: Lay your tortilla flat and spread a generous layer of the cheese mixture, leaving space at the edges.
  6. Roll it Up: Starting from the edge closest to you, roll the tortilla tightly away from you, tucking in the sides.
  7. Chill Out: Cover the roll with plastic wrap and refrigerate for at least 30 minutes.
  8. Slice and Serve: Once chilled, remove from the fridge and slice into bite-sized pieces.

Notes

These can be served on a platter or skewered with toothpicks. Add a drizzle of dressing for extra flavor.
