Lunchbox Pizza Muffins

A fun twist on a classic favorite, these savory muffins combine the comfort of pizza in a portable format, perfect for lunchboxes or snacks.

  • 1¼ cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon Italian seasoning
  • 2 large eggs
  • 1 cup whole milk
  • ⅓ cup pizza sauce (plus more for dipping)
  • 1 cup shredded mozzarella cheese
  • ⅓ cup mini pepperoni (or finely chopped regular)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prep your muffin tin by greasing it lightly with cooking spray or butter.
  3. Mix the dry ingredients in a large bowl: flour, baking powder, and Italian seasoning.
  4. Combine the wet ingredients in another bowl by beating the eggs, then mixing in the milk and pizza sauce.
  5. Pour the wet mixture into the dry ingredients and mix until just combined.
  6. Add the shredded cheese and mini pepperoni, folding them into the batter.
  7. Fill the muffin tin with the batter, filling each cup about 2/3 full.
  8. Bake for about 20-25 minutes until golden brown and a toothpick comes out clean.
  9. Cool for 5 minutes in the pan, then transfer to a wire rack.

Notes

These muffins can be frozen for up to three months. Customize toppings for a variety of flavors.
