Fresh and Flavorful Lemon Garlic Shrimp Pasta Salad

  • 1 lb shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Boil a pot of water: Start by bringing a large pot of salted water to a rolling boil.
  2. Add the pasta: Once the water is boiling, add your pasta of choice and cook according to package directions until al dente.
  3. Drain and cool: When the pasta is ready, drain it in a colander and rinse under cold water.
  4. Heat the olive oil: In a large skillet, add the olive oil over medium heat.
  5. Add the garlic: Once the oil is shimmering, toss in your minced garlic and sauté for about 30 seconds until fragrant.
  6. Cook the shrimp: Add the peeled and deveined shrimp in a single layer, season lightly with salt and pepper, and cook for about 2-3 minutes per side.
  7. Mix the ingredients: In a large mixing bowl, combine the cooled pasta, sautéed shrimp, halved cherry tomatoes, diced cucumber, thinly sliced red onion, and chopped fresh parsley.
  8. Add brightness with lemon: Zest and juice your lemon over the pasta salad, and drizzle more olive oil if desired.
  9. Taste and adjust: Taste and adjust seasoning with more salt and pepper or lemon juice as needed.
  10. Let it marinate: Cover and refrigerate for at least 30 minutes before serving for the flavors to meld.
