Irresistible Southern Shrimp Pasta Salad

  • 1 pound jumbo shrimp, peeled and deveined, tails removed
  • 8 ounces rotini or fusilli pasta
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon Old Bay seasoning
  • 1 cup diced celery
  • 1 cup diced bell pepper (any color)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil, add pasta, and cook until al dente.
  2. Prepare the Shrimp: In a saucepan, bring water to a simmer, add shrimp and cook for 2-3 minutes until pink. Remove and cool.
  3. Mix the Dressing: In a bowl, combine mayonnaise, Dijon mustard, lemon juice, and Old Bay seasoning; whisk until smooth.
  4. Combine Everything: Add drained pasta, shrimp, celery, and bell pepper to the dressing; toss gently.
  5. Season and Chill: Taste and adjust seasoning. Let the salad chill in the fridge for at least 30 minutes before serving.

Notes

Great for outdoor gatherings! Garnish with fresh parsley and serve with lemon wedges.
