  • ½ tbsp lemon juice
  • ¾ tsp pure almond extract
  • 1 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • 11 ½ tsp cinnamon (adjust to your liking)
  • ⅛ tsp salt (optional)

  • ½ cup unsalted butter (melted & cooled)
  • ½ cup milk (room temperature)

Instructions

  1. Preheat your oven to 350°F (175°C).

  4. Whisk together the flour, baking powder, cinnamon, and salt in a large mixing bowl.
  5. In another bowl, whisk together the eggs, melted butter, sugar, and milk until smooth.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined; gently fold in peaches last.
  7. Transfer the batter to the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
