Protein Costco Cannoli Cups

A healthier twist on classic cannoli, these protein-packed cups are crispy on the outside and creamy on the inside, making for a delightful dessert.

  • 1 cup light flour alternative (almond or coconut flour)
  • 2 tablespoons water
  • 1 tablespoon olive oil
  • 1 cup Greek yogurt or cottage cheese
  • ½ cup protein powder
  • 3 oz reduced-fat cream cheese
  • 1 teaspoon vanilla extract (optional)
  • Ground cocoa powder (optional)
  • Powdered sugar for dusting
  • Mini chocolate chips for topping (optional)
  • Crushed nuts or cinnamon for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the light flour alternative and a pinch of salt in a mixing bowl.
  3. Add 2 tablespoons of water and 1 tablespoon of olive oil, mixing until a dough forms.
  4. Roll the dough into thin sheets, about 1/8 inch thick.
  5. Use a round cutter to cut circles out of the dough.
  6. Wrap each dough circle around a cannoli mold, sealing edges with water.
  7. Place the molds on a baking tray and bake for 10-12 minutes.
  8. Let them cool completely before removing.
  9. Mix together Greek yogurt or cottage cheese, protein powder, and reduced-fat cream cheese for filling.
  10. Add vanilla extract or cocoa powder if desired, and adjust sweetness with honey or maple syrup.
  11. Fill each shell with the creamy filling using a piping bag.
  12. Dust the filled cannoli cups with powdered sugar and garnish as desired.

Notes

These cannoli cups are best served chilled and are perfect for gatherings.
