Patriotic Ice Cream Sandwiches

A vibrant and festive dessert perfect for summer celebrations, combining red velvet cookies and creamy ice cream layers.

  • 1 tablespoon cocoa powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 1 large egg
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1 pint vanilla ice cream
  • 1 pint blueberry ice cream
  • 1/2 cup white chocolate chips
  • 1/2 cup sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix dry ingredients: In a mixing bowl, combine the flour, cocoa powder, baking soda, and salt.
  3. Cream the butter and sugar until light and fluffy.
  4. Add egg, red food coloring, and vanilla extract.
  5. Combine the dry and wet ingredients, mixing until just combined.
  6. Chill the dough in the fridge for about 30 minutes.
  7. Bake for 8-10 minutes until edges are set; cool on a rack.
  8. Prepare the ice cream by letting it soften at room temperature.
  9. Assemble the sandwiches with one cookie, vanilla ice cream, and blueberry ice cream on top.
  10. Melt the white chocolate chips and dip edges of sandwiches, rolling in sprinkles.
  11. Freeze sandwiches for at least an hour before serving.
