Caramel Apple Cookies

Deliciously soft and chewy cookies packed with chunks of fresh apple and gooey caramel bits.

Ingredients

  • 2 cups all-purpose flour
  • 1 apple, diced (preferably Granny Smith)
  • 1/2 cup caramel bits
  • 1 egg
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Combine melted butter and brown sugar in a large mixing bowl until smooth.
  4. Add the egg and mix until fully incorporated.
  5. Whisk together flour and a pinch of salt in another bowl, then fold into the wet mixture until just combined.
  6. Fold in the diced apple and caramel bits.
  7. Scoop dollops of dough onto the baking sheet, leaving space between each cookie.
  8. Bake for 10-12 minutes until edges are golden and centers look slightly underbaked.
  9. Cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

For a vegan option, substitute the egg with a flaxseed egg. If caramel bits are unavailable, chop soft caramel candies.
