Incredible Sesame Chicken Salad

A vibrant sesame chicken salad bursting with flavors, textures, and nutrition, perfect for lunch or dinner.

  • 2 cups cooked chicken breast, shredded or diced
  • 4 cups mixed salad greens (spinach, romaine, or arugula)
  • 1 cup shredded carrots
  • 1 cup red bell pepper, sliced
  • ½ cup cucumber, thinly sliced
  • ⅓ cup green onions, chopped
  • ¼ cup sesame seeds (lightly toasted)
  • ½ cup sliced almonds (optional)

Instructions

  1. Prepare the chicken by poaching or using leftovers and chop into bite-sized pieces.
  2. Toast the sesame seeds in a dry skillet over medium heat until golden brown.
  3. Chop the veggies: slice the bell pepper and cucumber, and shred the carrots.
  4. Make the dressing with soy sauce, rice vinegar, sesame oil, honey, ginger, salt, and pepper.
  5. Assemble the salad by combining greens, chicken, carrots, bell pepper, cucumber, and green onions in a large bowl. Toss with the dressing.
  6. Garnish with toasted sesame seeds and sliced almonds before serving.
