Huckleberry Scones

Delightful huckleberry scones that bring back warm memories and delicious flavors, perfect for a cozy brunch.

  • 2 1/2 cups all-purpose flour
  • 5 tbsp. light brown sugar
  • 1 tsp. baking soda
  • 2 tsp. cream of tartar
  • 1/2 tsp. salt
  • 4 oz. butter, chilled and cut into small pieces
  • 1 cup huckleberries (fresh or frozen)
  • 3/4 cup milk (or half and half)
  • 1 tsp. vanilla extract
  • 1 cup sifted powdered sugar
  • 10 huckleberries (for garnish)
  • 1 tbsp. milk (for glaze)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Mix the dry ingredients in a large bowl.
  3. Cut in the butter until the mixture resembles coarse crumbs.
  4. Add the huckleberries, folding gently to combine.
  5. Combine the wet ingredients in another bowl.
  6. Pour the wet mixture into the dry ingredients, stirring until just combined.
  7. Shape the dough into a 1-inch thick circle and cut into wedges.
  8. Transfer the scones to a baking sheet and brush with milk.
  9. Bake for 15–20 minutes or until golden brown.
  10. Make the glaze and drizzle over the warm scones.
  11. Cool slightly before serving and garnish with huckleberries.

Notes

For best results, don’t overmix the dough. Store any leftovers in an airtight container.
