Huckleberry Crumb Bars

These delightful Huckleberry Crumb Bars are bursting with juicy huckleberries and topped with a buttery crumb, making them a perfect summer treat.

  • 13/4 cups (225 grams) all-purpose flour
  • 1/8 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 6 tablespoons (75 grams) granulated sugar
  • 1/4 cup (50 grams) light brown sugar
  • 12 tablespoons (169 grams) unsalted butter (melted)
  • 1 teaspoon pure vanilla extract
  • 2 cups (300 grams) huckleberries
  • 1 tablespoon cornstarch
  • 1/2 cup (100 grams) granulated sugar
  • 1/8 teaspoon kosher salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8 inch baking dish with parchment paper.
  3. Mix together the flour, baking powder, salt, cinnamon, granulated sugar, and brown sugar in a bowl.
  4. Add the melted butter and vanilla extract, stirring until just combined.
  5. Set aside about two-thirds of the crumb mixture for the topping and press the rest into the bottom of the prepared dish.
  6. Prepare the filling by tossing huckleberries with cornstarch, 1/2 cup sugar, and salt.
  7. Layer the huckleberry mixture evenly over the crumb base.
  8. Add the remaining crumb mixture over the huckleberries.
  9. Bake for 35-40 minutes, or until golden brown.
  10. Cool in the pan for at least 30 minutes before slicing.

Notes

These bars can be served warm, at room temperature, or chilled. They also make a great picnic treat!
